What austenitic and martensitic actually mean
The distinction comes down to what heat does to the metal’s structure.
A martensitic steel such as 420 can be hardened by heat treatment: heated and then quenched, its crystal structure transforms and the steel becomes hard. That responsiveness to heat treatment is the defining property of the family, and it is why 420 became the conventional needle steel — a needle body needs to hold its shape.
An austenitic steel cannot do that. Its structure does not transform the same way, so heat treatment will not harden it; its strength is developed by cold work instead — by deforming the metal at room temperature. Austenitic steels are also generally non-magnetic, where martensitic ones are magnetic.
